Lime prawns with chipotle mayonnaise

photoIngredients

Juice and rind of one lime

2 small green chillies, chopped

1 garlic clove, chopped

500 gms prawns, cleaned and deveined Chipotle Mayonnaise

1/2 cup mayonnaisejuice of 1 lime2 teaspoons Dijon mustard2 -3 tablespoons pureed chipotle chiles in adobo

2 tablespoons minced cilantro
Method:
1Add oil to a medium saucepan, add garlic and cook until soft
2 Add chilli, lime juice and rind and cook for one minute
3 Add prawns and cook until firm

For Mayonnaise
Whisk together mayonnaise, lime juice, mustard, chipotle and cilantro.

Serve mayonnaise as a dip for the prawns and accompany with arepa chips and cherry tomato salad
